Peanut Butter Pretzel Spider Cookies

Using a hand mixer, beat softened butter and both sugars together until fluffy. Add peanut butter until well combined, then add egg and vanilla extract, beating to incorporate well.
In a separate bowl combine flour, baking soda, and baking powder. Gradually mix dry ingredients to the peanut butter mixture. Beat until just combined.
Cover dough and refrigerate for 15-30 minutes. Line 2 baking sheets with parchment paper and set aside.
Form dough into 1 inch balls and place on baking sheet about 2 inches apart. Bake cookies for 12-15 minutes, until the edges are golden brown.
Remove from oven and immediately place a Rolo in the center of each cookie, then add pretzel pieces around the Rolo to resemble spider legs. Let the cookies cool on the baking sheet
