Holiday Ambrosia Salad

- 1 20 oz can Pineapple Chunks
- 1 15 oz can Mandarin Oranges
- 1 cup Maraschino Cherries
- 1 cup Green Grapes – halved
- 1 cup Pecans – chopped
- 3 cups Mini Marshmallows
- 1 cup Sweetened Coconut Flakes
- 1/2 cup Sour Cream
- 1 cup Heavy Whipping Cream
- 1 to 1.5 tablespoons Sugar - powdered or granulated white sugar
- 1/2 teaspoon Vanilla Extract
Place pineapple chunks and oranges in a strainer and set aside, approximately 30-45 minutes to completely drain. Drain cherries, rinse in cold water and set aside with other fruit to drain.
To the bowl of a stand mixer, add heavy cream, sugar and vanilla and whip until stiff peaks of whipped cream form, about 3-5 minutes. Fold in half of sour cream using a spatula, then fold in remaining sour cream being careful not to deflate whipped cream.
Gently stir coconut and marshmallows into the whipped cream mixture. Add in drained fruits, sliced grapes and nuts, stirring gently to incorporate. Cover the bowl in plastic wrap and chill until ready to serve.
