Sweet Potato Casserole
Sweet Potato Casserole is taken to a whole new level with a buttery pecan coconut topping! This easy-to-make recipe is the perfect side dish for Thanksgiving, Christmas, or any holiday celebration.
Preheat oven to 350 degrees. Butter an 8×8 or 9×9 casserole dish and set aside.
In a medium sized bowl, mix together mashed sweet potatoes, brown sugar, beaten eggs, half and half, salt, melted butter, and vanilla until well combined.
Place mixture into casserole dish and set aside. To a separate small bowl, add brown sugar, all-purpose flour, chopped pecans, shredded coconut and butter.
Mix pecan topping together with a fork, then sprinkle over the top of the casserole. Bake for 30 minutes, or until the top is golden brown.
Remove from oven, serve warm and enjoy!
