What Is The Secret To Moist Cupcakes?
In my experience, there are three secrets to making fluffy, light, moist cupcakes…
- Follow the directions in your recipe precisely – When a recipe requires room-temperature butter or eggs, they must be room temperature. If the flour has to be sifted, don’t skip that step either. Things like sifting and ingredient temperature will change the texture of a cupcake.
- Don’t overfill your cupcake liners – If you put too much batter into each liner, than it’ll slow the rate at which the cupcakes bake. A good rule of thumb for a perfect cupcake is only to fill the liners halfway. It’s also a great idea to use a measuring scoop so that all the cupcakes are the same size and will cook at the same rate.
- Try not to over mix your batter – The key to a fluffy, moist cupcake is having air pockets whipped into the batter that will expand in the oven. If you over mix the batter, those air pockets will fall, and the texture of your cupcakes will become dense.
