- Muffins or Bread – You’ll want to wash your zucchini and then use a box grater to shred it. Place the shredded zucchini on paper towels and pat dry, removing all the liquid. Transfer the shredded zucchini to a Ziploc bag, label and date the bag, then freeze it.
- Soups, Sautéed or Grilled – You’ll want to wash your zucchini and slice it into rounds. Blanche the zucchini rounds and pat them dry with a paper towel. Place the zucchini onto a baking sheet and then put them in the freezer for about an hour. Remove the zucchini from the freezer, transfer it to a Ziploc bag, label and date the bag, and then freeze it.
